Avocado Pudding

This is my go to whip it up in 5 minutes, indulge without the guilt, chocolate pudding. Simple & delicious, my two favorite words in any recipe. I generally throw this together during the week if my little family is craving something sweet after dinner.

RECIPE


Ingredients:


  • 2 Medium Ripe Avocados

  • 4 Tbsp Maple Syrup

  • 1 Tbsp Vanilla

  • 1 cup Almond Milk

  • 4 Tbsp Cacao

  • 2 Pinches of Sea Salt



Instructions:


Simply blend all ingredients together in a food processor or blender. I sieve the cacao to make sure the pudding is smooth and clump free. Blend until all ingredients are mixed together and pudding appears smooth like pictured above.


When serving I like to sprinkle raspberries, cherries, or shredded coconut on top. My pudding eaters have preferences.

My husband went on a bass fishing trip in Mazatlan Mexico. He became acquainted with a small group of men who shared his enjoyment of fishing. On one occasion to the store he noticed one of his new companions stacking up on small unknown bottles. Drawing my curious husband in, he began questioning his friend. The man laughed at the idea of how funny he must appear to my husband. He explained his wife loved this vanilla, swore by it even. Naturally my sweet husband picked up a few for me and my mom. Shortly after, I was dabbling around in the kitchen and fell for this dazzling vanilla. It made such a difference in my staple baking dishes that family even started asking my secret. Now the entire family uses this delightful handmade with love vanilla.



I love this one for its simple ingredients. Maybe one day in the future I will consistently make my own nut milk for the family but until then, this is my milk of choice. Side note, they have a delightful seasonal Holiday Nog.



I prefer Cacao over Cocoa since it is much less processed sustaining more of the praised upon benefits. Anything Antioxidant pulls me in, but Cacao can be a bitter when compared. May be an acquired taste but I love it and so does this recipe. Hope you will give cacao the chance it deserves :)
