Baked Rosemary Chicken & Radish

I walked into an old Italian restaurant I had been to many times as a child but this time with my children The place hadn’t changed.. vintage colored fixtures mounted on the ceiling, door trimmings painted dusty red, pictures that made you want to travel to Italy tomorrow. The restaurant bustling with lively conversations as the waitresses brought you wine & family styled dinner. The chicken we had that night was my inspiration for the chicken I made my family tonight.


From my family to yours ~


Ingredients:

  • Half a lemon

  • 1 onion

  • Several garlic cloves

  • 2 lovely sprigs of rosemary

  • 2 tbsp Paprika

  • Salt & Pepper

  • 3/4 cup Olive oil

  • Coconut oil

  • Two bunches of radishes

  • Herbs of Provence


Recipe:

Set oven to 400 F

Cut your onion in half. Use one half to make slices to lay at the bottom of the roasting pan under chicken. Drizzle some olive oil and salt & pepper onto those onions. The other half of the onion cut into three pieces to stuff into the chicken. You will take the lemon half and garlic cloves to stuff into the chicken as well. It helps to mash the garlic a little and squeeze the lemon when placing it inside the chicken.


In a small bowl whisk together olive oil, paprika, rosemary (chopped), salt, and pepper. Once mixed you will lay the chicken on the roasting rack and lather the olive oil mixture onto the chicken. Then grab aluminum foil and cover the chicken making sure not to rest foil on the chicken itself.


Place the chicken into the oven for about 1 hour and 40 minutes. You will then remove the foil and bake the chicken for an additional 30 minutes. When finished make sure your chicken has reached 165 F. Depending your oven you may need to bake it a little longer to get there.


While your chicken is cooking, thinly slice the radishes.



Heat your pan with coconut oil and then place radishes in pan. I sprinkled with some salt, pepper, and herbs of Provence. You will want them to start to become translucent and have crisp edges forming. This will take about 10-15 minutes.
